Protein bites are something of a staple in my house. I make them all the time to have on hand for a quick and healthy snack! I love that you can take them anywhere which is especially handy when you’re on the go with the kids over summer break! I hope you enjoy these quick and easy no-guilt treats for your family!

S’mores Protein Bites

  • 1 & 1/4 Cups Gluten Free Rolled Oats
  • 4 Gluten Free Graham Cracker Squares
  • 1/4 Cups Mini Chocolate Chips
  • 1/2 Scoop Vanilla Protein Powder
  • 1 Cup Marshmallow Fluff
  • 1/4 Cup Vanilla Coconut Milk

Step 1: Combine the oats and grahams in a food processor and pulse until grahams are completely broken up.

Step 2: Combine the oat/graham mixture with the remaining ingredients in a stand mixer.

Step 3: Mix on medium speed until completely incorporated.

Step 4: With a mini ice cream scooper, scoop batter one scoop at a time into hands and shape into a ball. *Mixture will be extremely sticky!

Step 5: Place balls on a parchment lined platter or half cookie sheet making sure they don’t touch.

Step 6: Place platter in refrigerator until completely cooled and set, about 1 hour.

Store in an air tight container in the fridge up to 5 days.

Makes about 12 protein bites.

-You do not have to use gluten free rolled oats/grahams if you would like to use regular rolled oats/grahams.

-You can substitute any milk or milk alternative you’d like for the vanilla coconut milk.

-If you do not have protein powder at your house regularly you could just buy a sample packet and use 1/4-1/2 of the packet until desired consistency is reached.
